- STIR-FRY carrots and onion in oil in a large fry pan till tender crisp.
- SPRINKLE chops with paprika on both sides; push vegetables to one side of pan and brown chops.
- DRAIN pineapple; reserving juice. Add in water to juice to make 1 1/2 c. and add in to pan. Stir in pineapple chunks, sugar, soya sauce, vinegar and ginger. Bring to a full boil; stir in rice and green pepper. Remove from heat and cover. Let stand 5 min.
