Ingredientes

  • 1 c. dry black-eyed peas
  • 1/2 c. diced ham - (to 1 c.)
  • 2 x garlic cloves chopped
  • 1 med onion minced
  • 1/2 tsp dry thyme
  • 1/4 tsp black pepper
  • 1 x habanero pepper seeds and stem removed, chopped (cover hands)
  • 1 can coconut lowfat milk - (14 to 16 ounce) unsweetened
  • 1/4 c. water or possibly broth
  • 3 c. warm cooked rice

Direcciones

  1. Soak black-eyed peas overnight; drain. Combine peas with ham, garlic, onion, thyme, pepper, chopped habanero, coconut lowfat milk, and water in a slow cooker. Cover and cook on LOW 8 to 12 hrs.
  2. Before serving, fold in rice (You can make the rice the night before and chill; add in to peas about 30 min before serving, turn to HIGH, and heat through).
  3. This recipe yields 4 to 6 servings.
