- Soak black-eyed peas overnight; drain. Combine peas with ham, garlic, onion, thyme, pepper, chopped habanero, coconut lowfat milk, and water in a slow cooker. Cover and cook on LOW 8 to 12 hrs.
- Before serving, fold in rice (You can make the rice the night before and chill; add in to peas about 30 min before serving, turn to HIGH, and heat through).
- This recipe yields 4 to 6 servings.
