Carrot Cake

I have tried many carrot cakes in my life but this recipe beats them all. You won't be sorry you gave it a try.

Ingredientes

  • 2 cups (250 ml) flour
  • 2 tsp (10 ml) baking soda
  • 1 1/2 tsp (7 ml) salt
  • 1/2 cup (125 ml) walnut pieces
  • 2 tsp (10 ml) cinnamon
  • 2 cups (500 ml) white sugar
  • 1 1/2 tbsp (17 ml) oil
  • 4 medium size eggs
  • 2 cups (500 ml) peeled, grated carrots
  • 1- 19 oz can (540 ml) crushed pineapple (keep juice)
  • Cream Cheese Icing
  • 8 oz (250 g) Philadelphia Cream Cheese (light or regular)
  • 1/4 cup (62 ml) butter (at room temperature)
  • 1/2 tsp (2 ml) vanilla extract
  • 2 1/4 cup (550 ml) confectionary sugar (powdered sugar)

Direcciones

  1. Pre-heat oven to 350 degrees F. Sift the dry ingredients together in a large bowl. Mix the wet ingredients together in another bowl. Incorporate the dry ingredients into the wet ingredients using an electric hand mixer.
  2. Pour in a 9 inch square baking pan and bake from 50 to 55 minutes or until a toothpick comes out clean.
  3. Cream Cheese Icing
  4. Mix all the ingredients together in a bowl with a hand held electric mixer. Spread on top of cooled cake. Enjoy!
