Ingredientes

  • 2 1/4 c. Unsifted flour
  • 2 c. Firmly packed light brown sugar
  • 1 tsp Baking soda
  • 1 tsp Baking soda
  • 1 tsp Grnd cinnamon
  • 1/4 tsp Salt
  • 2 c. Shredded carrots
  • 1 1/2 c. Vegetable oil
  • 4 x Large eggs
  • 1 pkt (9 ounce) condensed mincemeat, finely crumbled
  • 2 tsp Grated orange rind
  • 3/4 c. Minced nuts
  • 3 c. Powdered sugar
  • 1 pkt (8 ounce) cream cheese
  • 2 tsp Butter, softened
  • 1 1/2 tsp Grated orange rind
  • 1 tsp Vanilla

Direcciones

  1. Preheat oven to 350 . In large mixer bowl, combine all ingredients except nuts and frosting; mix till well blended. Beat on high speed 3 min.
  2. Stir in nuts. Pour into well greased and floured 15 x 10 inch baking pan.
  3. Bake 45 min or possibly till wooden pick inserted near center comes out clean.
  4. Cold completely. Frost with cream cheese frosting. Cut into bars. Store covered in refrigerator.
  5. Cream Cheese Frosting: In large mixer bowl, combine powdered sugar, cream cheese, butter, orange rind and vanilla, beat till smooth. Refrigerateif you like.
