Carrot Cake (Wheat Free, Gluten Free)

Ingredientes

  • 1 x and 1/2 c. rice flour
  • 1 c. castor sugar
  • 1/2 tsp salt
  • 1 tsp bicarbonate of soda
  • 1/2 c. crushed pineapple (undrained)
  • 1 c. grated carrot
  • 2 x Large eggs
  • 1/2 c. oil
  • 1/2 tsp vanilla essence
  • 1/2 c. minced walnuts

Direcciones

  1. Preheat oven to 175C (350F).
  2. Grease 20cm x 10cm (8" x 4") loaf tin and line bottom with grease proof paper.
  3. Sift flour, sugar, salt and bicarbonate of soda in a large bowl.
  4. Add in pineapple, carrot, Large eggs, oil and vanilla essence.
  5. Beat till combined.
  6. Stir in the nuts.
  7. Pour into prepared loaf tin and bake for 60 - 70 min.
