,%20carrot%20halwa%20featured%20a%20lot%20in%20my%20kitchen.%3C/p%3E%3Cp%3EThe%20pictures%20were%20taken%20a%20while%20ago,%20before%20I%20started%20blogging.%20Apologies%20for%20the%20solo%20picture.%3C/p%3E%3Cp%3EI%20post%20this%20recipe%20here%20today%20on%20request%20by%20my%20friend%20C.%20Here's%20to%20u%20C%20and%20my%20dear%20dear%20friend%20N%20who%20also%20shares%20my%20passion%20to%20food%20and%20cooking.%20Cheers!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E-%20Pressure%20cook%20grated%20carrots%20with%20about%20a%20cup%20of%20milk%20till%20one%20whistle.%3C/p%3E%3Cp%3E-%20After%20one%20whistle%20let%20the%20pressure%20cooker%20cool%20and%20pressure%20is%20released%20than%20remove%20its%20lid%20and%20put%20it%20again%20on%20the%20stove.%3C/p%3E%3Cp%3E-%20After%2030-40%20minutes,%20when%20all%20the%20milk%20is%20evaporated,%20add%20condensed%20milk%20to%20the%20dry%20mixture%20and%20tip%20in%20the%20sugar%20as%20well.%20Check%20the%20amount%20of%20sugar%20,%20you%20may%20require%20very%20less%20sugar%20as%20condensed%20milk%20very%20sweet%20in%20itself.%3C/p%3E%3Cp%3E-%20Let%20it%20simmer%20till%20condensed%20milk%20also%20is%20absorbed%20and%20mixture%20thick.%3C/p%3E%3Cp%3E-%20Add%20cardamom%20powder%20and%20mix%20well.%3C/p%3E%3Cp%3E-%20The%20next%20step%20is%20optional.%20In%20an%20another%20deep%20pan%20heat%20ghee,%20%20transfer%20cooked%20halwa%20to%20it%20and%20cook%20for%20another%20%20minute%20making%20sure%20you%20stir%20it%20with%20out%20fail%20all%20the%20way%20through.%3C/p%3E%3Cp%3ETo%20serve:%3C/p%3E%3Cp%3E-%20Chop%20raw%20almonds,%20vertically%20if%20u%20can%20as%20it%20looks%20better%20that%20way,%20and%20layer%20them%20at%20the%20bottom%20of%20your%20presenting%20dish.%20Layer%20your%20halwa%20on%20top.%20This%20makes%20the%20almonds%20soak%20in%20the%20lovely%20juices%20from%20ur%20halwa%20and%20combines%20the%20mixture.%20This%20is%20a%20tip%20I%20learned%20from%20my%20dear%20friend%20A.%20Thanks%20dear.%20:-).%20Feel%20free%20to%20sprinkle%20a%20few%20chopped%20almonds%20on%20top%20of%20ur%20halwa%20too.%3C/p%3E%3Cp%3E-%20While%20serving%20scoop%20out%20large%20portions%20of%20ur%20halwa%20on%20to%20ur%20serving%20dish%20and%20serve%20it%20hot%20along%20with%20a%20scoop%20of%20yummy%20vanilla%20ice%20cream.%20Heaven!!!%3C/p%3E%3Cp%3ETips:%3C/p%3E%3Cp%3E-%20If%20you%20are%20not%20using%20a%20pressure%20cooker%20,take%20a%20thick%20bottomed%20pan%20and%20pour%20milk%20in%20it,%20add%20carrots%20and%20let%20it%20cook.%20Once%20the%20milk%20starts%20boiling%20reduce%20the%20heat%20and%20let%20the%20mixture%20simmer.%3C/p%3E%3Cp%3E-%20For%20an%20easy%20microwave%20method,%20heat%20ghee%20in%20a%20MWO%20safe%20bowl%20for%201%20minute%20and%20add%20grated%20carrot.%20Cook%20for%202%20minutes.%20Add%20milk%20and%20cook%20till%20milk%20evapourates,%20stirring%20occasionally.%20When%20the%20mixture%20thickens,%20add%20condensed%20milk%20and%20sugar.%20Again%20cook%20for%20another%20few%20minutes%20till%20mixture%20turns%20thick%20once%20again.%20Remove%20from%20MWO,%20add%20cardamom%20powder,%20garnish%20with%20almonds%20and%20serve.%3C/p%3E%3Cp%3E-%20You%20can%20use%20cashew%20nuts%20instead%20of%20almonds,%20in%20which%20case%20fry%20them%20in%20ghee%20first.%3C/p%3E%3Cp%3E-%20Raisins%20go%20well%20with%20carrot%20halwa%20too.%3C/p%3E%3Cp%3E-%20A%20variation%20to%20the%20recipe%20is%20adding%20khoa%20or%20grated%20paneer.%20I%20personally%20do%20not%20prefer%20this%20as%20the%20end%20result%20is%20ever%20so%20slightly%20too%20sour%20to%20my%20palate.%3C/p%3E){kind=link}
