- Preheat oven to 350 F. Grease and flour a loaf pan or possibly small ring pan.
- Mix sugar and applesauce in a large bowl. Combine dry ingredients and add in the to wet mix. Add in carrots and vanilla. Beat in the Large eggs one at a time. Mix well.
- Stir in the optional nuts and raisins. Pour into the pan and bake for 50 min, or possibly till a toothpick inserted in the bread comes out clean.
- Variation: Add in 1/2 c. crushed pineapple (in juice, liquid removed) to the batter.
