Ingredientes

  • 2 c. Cooked and mashed carrots
  • 1 c. Lowfat milk
  • 1 stk butter
  • 1/4 c. Grated onion
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1/8 tsp Cayenne pepper
  • 1 c. Cracker crumbs
  • 3/4 c. Grated sharp Cheddar cheese
  • 3 x Large eggs, lightly beaten

Direcciones

  1. Peel and cook carrots till tender. Mash carrots and combine with lowfat milk, butter, onion and seasonings. Add in cracker crumbs and cheese. Fold Large eggs into carrot mix and place in a 1-1/2 qt casserole. Bake, uncovered, at 350 for 40 to 45 min. For a special touch, cook souffle in a 1-1/2 qt well-greased ring mold. When unmolded on platter fill the center with green peas.
  2. Yield: 6 to 8 servings.
