...%3C/p%3E%3Cp%3EIt's%20been%20my%20deeply%20held%20belief%20and%20practice%20for%20many%20years%20now%20that%20I%20don't%20do%20any%20cooking%20or%20baking%20myself%20on%20this%20day!%20After%20all%20today's%20the%20day%20I%20have%20to%20be%20pampered%20:-)%20When%20I%20was%20a%20child,%20my%20mom%20always%20baked%20my%20birthday%20cake%20herself-a%20double%20layered%20chocolate%20cake%20with%20chocolate%20ganache%20as%20a%20topping%20and%20filling%20in%20between%20the%20two%20layers%20(still%20my%20all-time%20favorite)...Calling%20it%20super-yummy%20would%20be%20an%20understatement!%20Over%20the%20past%20few%20years,%20my%20mom%20isn't%20able%20to%20bake%20as%20frequently%20as%20she%20used%20to,%20so%20my%20dad%20would%20go%20out%20and%20get%20the%20cake,%20usually%20a%20day%20before%20and%20keep%20it%20as%20a%20surprise%20for%20me%20(which%20wouldn't%20be%20a%20surprise%20for%20me,%20of%20course!).%20Post%20marriage,%20this%20ritual%20continues%20:-)...%3C/p%3E%3Cp%3EThis%20year%20is%20the%20first%20time%20I've%20baked%20my%20birthday%20cake%20myself.%20I%20wanted%20it%20to%20be%20a%20treat%20for%20my%20family%20and%20my%20friends%20in%20my%20Montessori%20class.%20My%20first%20thought%20was%20to%20re-create%20my%20favorite%20chocolate%20cake,%20but%20then%20I%20changed%20my%20mind%20at%20the%20last%20minute%20when%20I%20noticed%20another%20recipe%20in%20my%20book%20that%20mom%20used%20to%20bake%20often%20for%20us%20as%20kids-a%20cake%20that%20packs%20in%20the%20goodness%20of%20carrots%20and%20dates%20with%20wheat%20flour%20(not%20refined%20flour).%20You%20can't%20get%20healthier%20than%20that!%20This%20was%20the%20first%20time%20I%20baked%20this%20particular%20cake%20and%20it%20turned%20out%20really%20delicious,%20perfectly%20moist%20and%20soft.%20It%20was%20big%20hit%20with%20not%20only%20my%20family%20but%20also%20my%20new%20friends%20in%20my%20Montessori%20teacher%20training%20class%20(all%2020%20of%20them%20and%20our%20instructor-guide%20too!)...Don't%20take%20my%20word%20for%20it%20though...try%20it%20for%20yourself%20and%20see!%3C/p%3E%3Cp%3EMakes%20a%201%20to%201.5-kilo%20cake%20that%20gives%20about%2020%20medium-size%20slices%3C/p%3E%3Cp%3EPreheat%20oven%20to%20150%20C.%3C/p%3E%3Cp%3ESieve%20the%20flour%20with%20the%20baking%20powder%20and%20soda%20bicarbonate%20and%20keep%20aside.%3C/p%3E%3Cp%3EInto%20a%20mixing%20bowl,%20break%20the%203%20eggs%20and%20beat%20till%20frothy%20(use%20an%20electric%20beater%20itself%20for%20optimal%20results).%3C/p%3E%3Cp%3EThen%20add%20the%20sugar%20and%20beat%20for%201%20minute.%3C/p%3E%3Cp%3ENow%20add%20the%20oil%20and%20vanilla%20essence%20and%20beat%20for%202%20more%20minutes.%3C/p%3E%3Cp%3EInto%20this,%20add%20the%20flour%20and%20mix%20well%20with%20a%20wooden%20spoon.%3C/p%3E%3Cp%3EAdd%20the%20grated%20carrots%20and%20dates%20to%20this%20mixture%20and%20make%20sure%20everything%20is%20well%20combined,%20but%20do%20not%20stir%20too%20much.%3C/p%3E%3Cp%3ETransfer%20to%20a%20greased%20cake%20tin%20(or%20nonstick%20or%20silicon-then%20you%20don't%20have%20to%20grease!).%3C/p%3E%3Cp%3EBake%20for%2045%20minutes%20to%201%20hour%20in%20a%20120%20C%20oven.%3C/p%3E%3Cp%3EWhen%20cool,%20remove%20from%20tin%20and%20serve%20as%20you%20please-either%20as%20it%20is%20or%20with%20a%20dollop%20of%20cream%20or%20icecream%20on%20top!%3C/p%3E%3Cp%3ETIPS:%3C/p%3E%3Cp%3ETo%20test%20if%20the%20cake%20is%20done,%20insert%20a%20toothpick/clean%20butter%20knife/cake%20tester%20into%20the%20cake.%20If%20it%20comes%20out%20clean,%20its%20done.%20However,%20if%20there%20are%20crumbs%20or%20gooey%20batter%20attached%20to%20it,%20bake%20some%20more!%3C/p%3E%3Cp%3EYou%20could%20substitute%20the%20vanilla%20essence%20with%20cinnamon%20powder%20or%20nutmeg%20powder%20or%20both!%3C/p%3E%3Cp%3EFor%20the%20grated%20dates-I%20first%20tried%20grating%20it%20by%20hand%20but%20by%20the%20time%20I'd%20done%20one%20date,%20I'd%20lost%20patience.%20That's%20when%20my%20mom%20walked%20in%20and%20said%20she%20used%20to%20do%20this%20in%20the%20food%20processor.%20You%20can%20also%20do%20this%20in%20the%20spice%20jar%20of%20your%20mixie.%20Just%20chop%20the%20dates%20coarsely%20and%20sprinkle%20some%20flour%20on%20top%20before%20grinding%20so%20it%20doesn't%20get%20pasty.%3C/p%3E%3Cp%3EI%20am%20linking%20this%20to%20the%20following%20blog%20events:%3C/p%3E%3Cp%3Eand%3C/p%3E){kind=link}
