Ingredientes

  • 12 ounce Broccoli flowerets, about 4
  • 1/2 c. Minced onion
  • 2 cl Garlic, chopped
  • 1 sm Red bell pepper, minced
  • 8 ounce Raw chicken breasts, cubed
  • 2 Tbsp. Soy sauce
  • 1 1/4 c. Defatted chicken broth, divi
  • 1 1/2 Tbsp. Cornstarch
  • 1/8 tsp Grnd red pepper
  • 1/8 tsp Black pepper, optional
  • 2 c. Fresh bean sprouts, rinsed
  • 1/4 c. Cashews

Direcciones

  1. Blanch broccoli in boiling water 2 min; rinse in cool water; drain; set aside.
  2. Coat skillet with cooking spray. Over medium heat, sauti onion, garlic, and bell pepper about 10 min. Remove from pan; set aside and keep hot.
  3. Wipe skillet with a paper towel; coat very lightly with cooking spray; add in cubed chicken; sauti over medium heat till golden, about 8 min.
  4. Add in soy sauce, 3/4 c. chicken broth, and reserved onion mix to pan. Arrange blanched broccoli on top. Simmer, covered, 5 min. Remove broccoli with slotted spoon; keep hot.
  5. Dissolve cornstarch into remaining 1/2 c. broth; add in grnd peppers.
  6. Stir into chicken mix; simmer till thickened. Add in bean sprouts and simmer 1 minute.
  7. With slotted spoon, remove chicken-bean sprout mix to a warmed serving plate. Top with reserved hot broccoli; drizzle with sauce.
  8. Sprinkle with cashews. Serve over rice.
