Receta Cashew Shrimp with Red Peppers, self-walking dogs
Many years ago mon mari gave me The Thousand Chinese Recipe Cookbook for Christmas.
The book, originally published in 1966, is almost 1,000 pages with lots of information, but no photos.
I only have the words (many words) that, in Chinese cuisine, the food should be pleasing to the eye as well as the palate.
I have always rather liked that idea….
When I make stir-fries I try for a variety of colors, shape and textures.
With that as my goal, great taste just seems to fall into place.
This is a light dish – good for after a big turkey dinner
Cashew Shrimp with Red Peppers
Total time: 25 minutes
Ingredients:
- 12oz (360gr) cleaned shrimp
- 1 red pepper, cut into strips, the strips cut in half
- 2 ribs celery, sliced at an angle
- 1 leek, cleaned, cut in half, sliced
- 2 cloves garlic, minced
- 1 tbs minced fresh ginger
- 2 tsp sesame or walnut oil
- 2 tsp olive oil
- 1/2 cup (4oz, 120ml) chicken stock
- 2 tbs dry sherry
- 1 tbs peanut butter
- 1 tbs cornstarch (Maizena, corn flour) dissolved in
- 1 tbs soy sauce plus 1 tbs water
- 1/2 cup cashews
- Basmati Rice:
- 1/2 cup (3.3oz, 95gr) Basmati rice
- 1 cup (8oz, 240ml) chicken stock
Instructions:
Cook rice in chicken stock until done. Fluff with fork.
Heat oils in large nonstick skillet over medium-high heat.
Add peppers, celery, leek to skillet and stir-fry for 2 minutes.
Add garlic, ginger, and stir-fry 1 minute
Add shrimp and stir-fry until they start to curl and turn opaque.
Add chicken stock, sherry, peanut butter and bring to a boil.
Reduce heat, cover and simmer 2 – 3 minutes.
Add cornstarch mixture, stir until cleared and thickened.
To Serve:
Arrange Basmati on a large platter.
Spoon Shrimp and Vegetables on top, sprinkle with cashews and serve.
This made mon mari happy on Fish Hell Night.
Friday’s are busy days for me.
I get up early, before the sun, and get ready for school,
By the time I’m dressed the sun is up and I walk the dogs.
That’s followed by breakfast, coffee, a few minutes of computer time, and my French class.
After class I run whatever errands are needed and do the weekly shopping.
I get back home mid-afternoon and give the dogs their pig ears while I put away the shopping.
If I’m lucky, and mon mari was feeling kind, he has taken them on their mid-day walk. If not, I do that before I have my (late) lunch.
He doesn’t do it often.
I asked if he had walked them.
He said he didn’t have to…. They had ‘self-walked’.
It was very windy here and the small garden gate had blown open.
Apparently, they went for their usual walk, just without a human companion. Mon mari said when he went out to track them down they were walking up the road as usual, got to the front gate and waited for him to open it.
All pure coincidence, I’m sure… Had he not been there at just the right time they would have kept on going until they got to Spain.
Or, maybe they remembered it was pig ear day…..
