Receta Catfish And Shrimp Soup

Ingredientes
- 2 Tbsp. extra virgin olive oil
- 2 c. onions, minced
- 2 x garlic cloves, chopped
- 1 x (28 ounce.) can tomatoes
- 3 Tbsp. tomato paste
- 1 x bay leaf
- 4 c. water
- 1 c. white wine
- 8 fl ounce ounces bottled clam juice
- 1/2 lb shrimp, medium, shelled
- 16 ounce catfish fillets cut in 1 cubes
- 1/2 tsp salt
- 1/4 tsp black pepper Grnd fresh coriander, minced, for garnish Lemon, cut in wedges, for garnish
Direcciones
- In large pot, heat oil. Saute/fry onion and garlic till onions are transparent.
- Add in tomatoes, tomato paste and bay leaf. Cover and simmer 25 min. Add in water, wine and clam juice. Simmer uncovered 45 min. Add in shrimp, catfish, salt and pepper. Cook 10 min, or possibly till catfish flakes easily. Remove bay leaf.
- Garnish each serving with minced coriander and lemon slices.
