Receta Cauliflower Alfredo Cream Sauce with Broccoli

As the weather cools, the foods I eat begin to change to hearty comforting foods; foods like stews, soups and sauces. Alfredo is one of my favorite sauces, but it’s a calorie bomb and has way too much dairy for one meal. That’s why I like to make my Alfredo sauce with cauliflower cream. It’s a cream sauce without the cream or butter – just a little bit of cheese and a lot of amazing cauliflower. It’s hard to believe that cauliflower can turn into a bowl of creamy goodness, but it can. Since it’s made from cauliflower you don’t have t skimp on the sauce. It tastes great over zucchini noodles, spaghetti squash or whole wheat pasta.
One large head of cauliflower can make up to 4 cups of cauliflower cream sauce. The sauce is so versatile, I blend it all up and freeze half before adding the garlic and cheese. This magical cream sauce freezes extremely well and can be used as a sauce for vegetables, broiled chicken or in creamy soups. Season it with your favorite spices, vegetables, or cheese and enjoy it. The Alfredo sauce can easily be made vegan by substituting the Parmesan cheese with nutritional yeast.
Cauliflower Alfredo Cream Sauce with Broccoli
Ingredients
- For The Basic Cream Sauce
- 8 cups filtered water
- juice of 1 lemon
- 1 large head of cauliflower cut into florets
- For Alfredo Sauce
- 1 1/2 cups cauliflower cream
- 2 cloves of garlic - chopped
- 1 1/2 cups broccoli florets
- 1/8 cup water
- 1/4 cup Parmesan cheese or nutritional yeast plus more for sprinkling
Instructions
Place cauliflower florets along with water and lemon juice and bring to a boil
Reduce heat to low and simmer for 20-30 minutes until cauliflower becomes tender - it should be easy to pierce with a fork
Drain cauliflower and reserve 1/4 cup of water - allow to cool
Once cool enough to handle, add half of the cauliflower and reserved water to a food processor and puree until smooth
Remove from bowl and add the second half of cauliflower and water blend until smooth and combine batches
For Alfredo Sauce
add water to a sauce pan along with broccoli and garlic steam over medium low heat until broccoli becomes tender
Drain excess water from broccoli
Stir in the cauliflower cream and heat over low - about 8 minutes
Add the cheese and mix in well - turn off heat
Serve over whole wheat pasta, zucchini noodles or spaghetti squash sprinkled with a dash of cheese
Freeze remaining cauliflower cream in for up to three months
