Cauliflower and Baby Greens Salad Pizza

Pizza of sauteed Cauliflower, Artichoke Pesto topped with Baby Greens Salad

Ingredientes

  • 1 Pizza Dough ( see notes) makes 3 personal size
  • 3 tablespoons Artichoke Pesto click link http://www.olivenginger.com/california-artichoke-pesto/
  • ⅓ cup grated mozzarella or fontina cheese ( optional)
  • 1 small onion chopped
  • ½ medium cauliflower broken into florets then chopped finely
  • 1 tablespoon olive oil
  • 1 clove garlic chopped
  • ½ tsp chili flakes
  • Salad
  • 4 cups baby mixed greens or baby spinach + a few microgreens
  • ½ cup green olives
  • 1 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Direcciones

  1. Heat the oven to 500 F or higher for 20 minutes.
  2. Meanwhile heat a saute pan, warm the oil. Add onion and saute till soft. Add cauliflower, garlic and chili flakes and cook for 2-3 mins till soft and they pick up some color. Reserve.
  3. Salad
  4. Blend oil, vinegar, salt and pepper in a bowl with a fork. Toss the greens and olives.Set aside.
  5. To make the pizza
  6. Use a rolling-pin to stretch out the dough about 10 inches for a single large pizza or 6 inches for personal size. I use my hands to stretch out, this minimizes the air escaping which gives the pizza bubbles. I practiced the hand stretching method, it takes a little time and effort, but worth it.
  7. Once the oven is scorching hot, pick the pizza and place it on the pizza peel making sure it can easily slide off into the oven, (use coarse corn or semolina over the peel).
  8. While the pizza is on the peel gently spread a thin layer of pesto followed by a layer of the cauliflower mixture and cheese. Shove the pizza into the oven and bake for 8-10 minutes. It should puff up irregularly and have some charred spots.
  9. Ease it out of the oven and cool slightly. Slice the pizza into 4s or 6s, then cover the pizza with the salad.
  10. Serve
