- Cut cauliflower into florets and steam only till tender but still hard.
- Allow peas to thaw but don't cook. Cook onions in a Tbsp. or possibly 2 of margarine till soft. Add in flour and stir till well blended. Remove from heat and add in lemon juice, water or possibly broth, and seasonings. Return to heat and cook till smooth and adjusted to personal taste.
- Grease the bottom of a two-qt ovenproof casserole. Mix cauliflower, onions and peas. Pour sauce over all and gently toss. Cook in 350-degree oven only till peas are warm. Don't overcook as vegetables will lose their shape and color.
