This Cauliflower Mac and Cheese gives you all the creamy, cheesy goodness of mac and cheese—without the high starch content of pasta.

Probably the only time I really miss pasta is when it comes to macaroni and cheese. It’s a classic dish that my mom used to make all the time when I was a kid. I will be the first one to admit that I loved the stuff that came in a box. You know the kind with a powdery substance that when added to milk tasted like cheese. Quite a “crafty” concoction to say the least.

When I was at the market, I spotted cream cheese with bacon. Yes, with bacon. That cheese then initiated this dish. Boy am I glad I created this beautiful mess. It’s as they say, “Love At First Bite” or “Good To The Last Drop, err, lick, or something like that.

I was apprehensive to let the hubby know that I made mac and cheese, without the mac.

Lo and behold, he loved it. Every last bit of it. None left. All gone.

1 large head cauliflower, cut into small florets ½ Tablespoon butter ½ cup heavy cream 2 ounces cream cheese with bacon spread 1½ teaspoons dry mustard 1½ cups shredded sharp Cheddar, 1 cup for the sauce and ½ for the top ¼ teaspoon freshly ground black pepper ⅛ teaspoon salt ¼ cup crushed fried onions (such as French's ), crushed

Preheat oven to 375 degrees F. Bring a large pot of water to a boil. Butter an 8 x 8 baking dish, set aside. Cook the cauliflower in the boiling water until crisp-tender, about 5 minutes. Drain well and pat between several layers of paper towels to dry. Transfer the cauliflower to the baking dish, Season with salt and pepper and set aside. Bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and dry mustard until smooth. Stir in 1 cup of the cheese, salt, pepper and garlic and whisk just until the cheese melts, about 1 to 2 minutes. Remove from heat, pour over the cauliflower, and stir to combine. Top with the remaining ½ cup cheese. Sprinkle with the crushed fried onions. Bake until browned and bubbly hot, about 20 minutes. Serve. 3.2.2925
