Cauliflower Salad (Insalata Di Rinforza)

Ingredientes

  • 1 x caulflower broken into florets
  • 1 x salt and pepper
  • 5 Tbsp. extra virgin olive oil
  • 1 1/2 Tbsp. wine vinegar
  • 1 Tbsp. capers liquid removed
  • 1 Tbsp. minced parsley few black olives
  • 1 x 49g can anchovy fillets liquid removed and sliced

Direcciones

  1. Cook the cauliflower in boiling salted water till cooked but hard about 5 to 6 min.
  2. Drain and rinse under running cool water.
  3. Mix the oil vinegar and a little salt and pepper together in a salad bowl.
  4. Add in the cauliflower and toss gently.
  5. Sprinkle with the capers parsley and olives.
  6. Arrange the anchovy fillets in a lattice pattern on top.
  7. Serve immediately.
  8. Serves 4
