Ingredientes

  • 3 x Cedar shingles broken into 8 6' pcs
  • 1/4 c. vodka (60ml)
  • 1/4 c. vermouth (60ml)
  • 1/4 c. fresh lemon juice (60ml)
  • 1 Tbsp. prepared horseradish - (15ml)
  • 1 x clv garlic, chopped
  • 2 Tbsp. juniper berries - (30ml)
  • 2 sprg fresh thyme
  • 1 x side of Atlantic salmon cut into 8 portions approx. 6oz ea Tarragon Mayonnaise
  • 1 c. white wine - (250ml)
  • 3 sprg fresh tarragon
  • 1 c. mayonnaise - (250ml)
  • 2 dsh Tabasco - or possibly to taste

Direcciones

  1. Soak Cedar in cool water for 1 hour.
  2. Mix all above ingredients and place in sealable plastic bag, add in salmon and marinate in chill for 1hour.
  3. Preheat barbecue to 400 F.Place soaked Cedar plank on grill rack till they start to smoke.
  4. Reduce heat to 300 F and place salmon pcs on to Cedar. Close lid on barbecue and cook for approximately 15 min. Salmon should have a golden brown colour and flake with ease with clear juices running through. Serve with tarragon mayonnaise and enjoy!
  5. Tarragon Mayonnaise:In a sauce pan combine white wine and tarragon sprig, on medium heat reduce to 1/4 c.. Strain and chill.
  6. Mix the chilled reduction with mayonnaise and add in 2 splashes of Tabasco sauce. Chill till time to serve.
