Receta Certainly NOT Least
Since the beginning of my quest through the convenience of the rotisserie chicken I have used a total of three cups of shredded poultry and, in theory, fed about 14 people with the meals I prepared with it. One cup left..such a simple decision to make, right? NO. Not easy..But, I came up with a classic (and delicious tasting) lunch item- it has definitly got a unique ingredient list- but it was with whatever I had in my fridge and pantry..It was the end of the week It is quite yummy if I do say myself.
Chicken Salad Roll-Up
INGREDIENTS:
- 1 cup shredded Rotisserie Chicken, diced
- 1/4 cup dried cherries (or raisins would be good here!)
- 1/4 cup diced celery (green onions- YUM!)
- 1/4 cup toasted, chopped pecans (almonds..walnuts..)
- 1/4 cup low-fat mayonnaise
- 1 tablespoon buttermilk
- 1/2 teaspoon salt
- 1/2 teaspoon lemon pepper
- 1/4-1/3 cup cubed apples
- 4 (6-inch) whole wheat tortillas
DIRECTIONS:
In a large bowl, combine the chicken, dried cherries, celery, nuts, mayonnaise, milk, salt and lemon pepper and apple. Toss together well and refrigerate until chilled. Divide among 4 wheat tortillas. Roll up and enjoy!

So this is the last of my use for the single Rotisserie Chicken I bought earlier in the week. I incorporated it into three different meals (two potential dinners and one lunch). You can easily scale down these recipes and get 6 or even 8 meals, just by using 1/2 cup of the shredded chicken. The recipes I have provided are not limited to these alone! Any recipe that calls for cooked chicken, pork, beef..I can almost promise that you can fit in the use of a Rotisserie Chicken.
