Ingredientes

  • 2 med tomatoes cored, and coarsely minced
  • 6 x fresh or possibly canned chestnuts cut into 1/4" dice (peeled if using fresh)
  • 2 1/2 Tbsp. finely-diced onions
  • 2 1/2 Tbsp. thinly-sliced green onions
  • 1 Tbsp. chopped cilantro Salt to taste
  • 1 Tbsp. vegetable oil
  • 3 Tbsp. chopped onions
  • 1 1/2 tsp chopped garlic
  • 1/2 c. chopped Char Siu
  • 1/2 c. half-inch-diced Char Siu
  • 1/2 c. minced roast duck meat
  • 1 x Chinese sausage - (abt 2 ounce) sliced thinly
  • 3 Tbsp. sliced green onions
  • 2 Tbsp. Hoisin sauce
  • 2 Tbsp. chili garlic sauce
  • 8 x flour tortillas - (8" dia)
  • 1/2 lb mozzarella cheese cut thin slices
  • 32 x cilantro leaves, (optional)
  • 2 x green onions trimmed, and cut into thin strips abt 2" long

Direcciones

  1. Toss the tomatoes, water chestnuts, onion, green onions, cilantro and salt together in a medium bowl till well mixed.
  2. For the Filling: Heat a wok over high heat till warm. Add in the oil and swirl to coat the sides. Add in the onion and garlic and cook, stirring, till fragrant, about 30 seconds. Add in both types of char siu, roast duck, Chinese sausage and green onion. Stir-fry till the sausage is cooked through about 2 min. Remove from the heat and stir in the hoisin sauce and chili garlic sauce.
  3. For the Quesadillas: Heat a 9- or possibly 10-inch non-stick pan over medium-high heat till warm. For each quesadilla, place 1 tortilla in the pan. Top with 1 slice cheese, 2 to 3 Tbsp. of the pork mix, 8 cilantro leaves, green onions and a second slice of cheese. Cover the filling with another tortilla. Cook, turning as needed, till the cheese is melted and the tortilla is browned on both sides, 1 1/2 to 2 min per side. Repeat with the remaining ingredients to make 3 more quesadillas. Cut the quesadillas in wedges and serve warm with the salsa.
