Chargrilled Pork On Sweet Potatoes

Ingredientes

  • 1 x 180 g fillet pork
  • 1 tsp Grnd coriander
  • 1 tsp Grnd cumin
  • 1 Tbsp. Extra virgin olive oil
  • 180 gm Sweet potatoes
  • 1 x Aubergine, diced
  • 1 x Clove garlic, crushed
  • 1 ounce Root ginger, minced
  • 2 x Tomatoes, blanched and seeded
  • 10 x Coriander leaves, minced

Direcciones

  1. Marinate the pork in the coriander, cumin and extra virgin olive oil. Dice the sweet potatoes, blanch them and fry gently in a pan to colour them.
  2. Make a salsa by sauteing the diced aubergine in some extra virgin olive oil with the garlic and root ginger, then remove from the heat and add in the tomatoes and coriander leaves.
  3. Chargrill the pork fillet and serve on a bed of sweet potatoes with the salsa.
