Ingredientes

  • 2 can Red kidney beans, liquid removed
  • 2 x 7 ounce fillet steaks of salmon
  • 2 x Red peppers, roasted
  • 2 x Shallots, minced
  • 2 x Garlic cloves, minced
  • 4 x Anchovy fillets, (tinned)
  • 100 ml Fish stock
  • 100 ml Red wine
  • 50 ml Red wine vinegar Parsley, coriander, chives, basil Extra virgin olive oil

Direcciones

  1. Saute/fry the garlic and shallots in a pan with some extra virgin olive oil, add in the beans, steak and red wine and bring to the boil and cook for 3 min.
  2. Meanwhile in a warm non stick griddle pan add in the seasoned salmon and charr. Then create the lines on the surface and cook gently through.
  3. To finish off the casserole add in the anchovy fillets, diced pepper, herbs, seasoning and a bit of the vinegar to taste.
  4. Place the casserole on the plate, the salmon on top and the basil leaves as a garnish.
