Chayotes Stew (Sayur Labu Siam)

Ingredientes

  • 1/2 lb stew meat Water as needed
  • 3 Tbsp. vegetable oil
  • 2 x chayotes peeled and cubed
  • 2 x spring onions sliced 3/8" slices
  • 1/4 c. chopped flat-leaved parsley
  • 1 tsp tamarind dissolved in
  • 1 Tbsp. water
  • 1 Tbsp. fried onions
  • 10 x red chilies
  • 4 x garlic cloves
  • 2 x candlenuts
  • 1/2 x inch fresh ginger
  • 1/4 tsp grnd pepper
  • 1 Tbsp. dry shrimp soaked briefly in warm water and liquid removed Salt to taste

Direcciones

  1. Simmer the meat in water to cover, together with the salt, till tender. Remove and slice the meat in 1/2-inch by 3/4-inch cubes. Set aside 4 c. of the broth.
  2. Heat the oil and fry the spice-paste till fragrant. Add in the meat and stir it around till the spices are well-mixed with the meat. Add in the broth.
  3. Let it come to a boil, then add in the chayotes, spring onions, chopped parsley and tamarind water. Serve with fried onions/shallots scattered on top.
  4. This recipe yields 3 to 4 servings.
