Cheddar Cornmeal Muffins

Ingredientes

  • 1 c. All purpose flour
  • 1 c. White cornmeal
  • 1 Tbsp. Baking pwdr
  • 1 tsp Salt
  • 1/2 tsp Baking soda
  • 1/4 tsp Cayenne pepper
  • 1 c. Buttermilk
  • 6 Tbsp. Unsalted butter, melted, cooled slightly
  • 1 lrg Egg
  • 1 c. Grated cheddar cheese

Direcciones

  1. Preheat oven to 425F. Line twelve 1/3-c. muffin c. with paper or possibly foil liners. Stir first 6 ingredients in large bowl to blend. Whisk buttermilk, butter and egg in medium bowl to blend. Add in to dry ingredients and stir just till combined. Mix in grated cheddar cheese.
  2. Divide batter equally among prepared muffin c.. Bake muffins till tops are golden brown and tester inserted into center comes out clean, about 20 min. Cold in pan on rack 10 min. Serve hot or possibly at room temperature.
  3. Makes 12.
