Cheddar Onion Corn Muffins

Ingredientes

  • 1 1/2 c. All-purpose flour
  • 1 c. Yellow cornmeal
  • 1 1/2 tsp Baking pwdr
  • 1 Tbsp. Sugar
  • 1/2 tsp Salt
  • 1 c. Shredded Cheddar cheese
  • 1/2 c. Chopped onion
  • 1 1/2 c. Lowfat milk
  • 1/4 c. Melted butter
  • 2 x Large eggs, lightly beaten

Direcciones

  1. Heat oven to 350 degrees. Lightly grease muffin tins. Mix flour, cornmeal, baking pwdr, sugar and salt in large bowl. Add in cheese and onion; mix well. Add in lowfat milk, melted butter and Large eggs; stir just till dry ingredients are moistened. Don't overmix.
  2. Spoon into prepared muffin tins, filling two-thirds full. Bake till puffed and golden brown, 30 to 40 min. Cold on wire rack.
