Receta Cheers to Regan Miller Jones!

This is a special post to celebrate the 40th birthday of Regan Miller Jones, a wonderful colleague and friend who is an inspiration to so many registered dietitians. I can’t think of anyone else who has contributed so much to our profession in this digital age — helping RDs gain confidence in food photography, understand the importance (and rules) of social media disclosure, improve their skills in blogging and fully leverage social media platforms.

Regan is the creator of Healthy Aperture, the first online food photo gallery focused on healthy food and curated by RDs. I am lucky to be a co-founder of this incredible site with Regan. Regan is also the creator of RDs4Disclosure, Recipe Redux and Blog Brulee. Come on. That’s pretty darn amazing.

So in honor of Regan’s birthday, 40 RDs are celebrating her 40th birthday. We all have her to thank for so many things. I’d like to toast Regan with one of my favorite cocktails, Strawberry Basil Mojitos. I love this combination, although you can use mint in place of the basil, if you wish. Fresh lime juice is critical. This refreshing cocktail is the perfect summer time drink, but it’s actually ideal any time of the year. All the best to you, Regan. Thanks for all that you do!

Slice the strawberries and place at the bottom of a tall glass or a shaker, along with the torn basil leaves. Pour in the simple syrup and lime juice and muddle the mixture (pounding gently). Stir in the rum and top with club soda and crushed ice. Shake the drink until well mixed if using a shaker. Garnish with strawberry slices.
