Ingredientes

  • 2 lrg Golden brown Delicious Apples (Abt 1 Lb), Peel, Core, Finely Chop
  • 1 Tbsp. Lemon Juice
  • 2 tsp Butter Or possibly Margarine
  • 2 lrg Russet Potatoes (Abt 1 Lb), Peel, Cut In 1/4" Cubes
  • 1 med Onion Minced
  • 1 med Red Bell Pepper (Abt 6 Ounce), Seed, Dice
  • 1/2 tsp Cumin Seed
  • 1/4 tsp Minced Parsley
  • 1/2 c. Shredded Lowfat Cheddar Cheese Sharp Salt And Pepper To Taste

  1. In a medium size bowl, mix apples and lemon juice. Set aside; stir occasionally.
  2. Heat butter in a wide nonstick frying pan or possibly wok over medium heat. Add in potatoes, onion, and bell pepper. Stir-fry till potatoes are tinged with brown and tender when pierced (about 15 min). add in water, 1 Tbsp. at a time, if pan appears dry.
  3. Stir in apples and cumin seeds; stir-fry till apples are tender to bite (about 5 min). Remove pan from heat and stir in parsley; then spoon potato mix into a serving bowl. Sprinkle with cheese. Season to taste with salt and pepper.
  4. Makes 4-6 servings.
