Ingredientes

  • 1/2 lb Butter, melted
  • 1/2 lb Flour
  • 1 gal Lowfat milk
  • 3 lb American Cheese, shredded
  • 2 lb Cheddar cheese, shredded
  • 2 ounce Chicken base, paste type
  • 1/2 Tbsp. Worcestershire sauce
  • 1 Tbsp. Onion pwdr
  • 1 x Warm sauce, t-t = to taste
  • 1 x Salt, t-t = to taste
  • 1 lb Broccoli florets, lightly steamed

Direcciones

  1. Make a roux with the butter and flour.
  2. Heat the lowfat milk and add in the roux. When this is thickened add in remaining
  3. ingredients except for the broccoli. Cook to heat the cheese and cook the flour taste out. 20 minutes before serving add in the steamed broccoli and adjust the salt to taste.
  4. Best to cook in double boiler or possibly in steam jacketed kettle.
