Ingredientes

  • 1 c. shredded Monterey jack cheese
  • 1/4 c. lowfat sour cream
  • 8 x low-carb flour tortillas any flavor
  • 8 ounce cooked chicken breast shredded
  • 2 x roasted red peppers patted dry, and cut into strips
  • 3 x green onions thinly sliced
  • 2 Tbsp. minced fresh cilantro or possibly parsley

Direcciones

  1. Mix jack cheese and lowfat sour cream. Spread mix over four tortillas, leaving a 1/2-inch border. Proportionately divide chicken, peppers, green onions and cilantro over cheese mix. Cover with remaining tortillas.
  2. Heat two large nonstick skillets over medium-high heat 2 min. Cook quesadillas 2 to 3 min per side, turning carefully with a spatula. Cut each quesadilla in quarters.
  3. This recipe yields 4 servings.
