Ingredientes

  • 1 tbsp soft butter
  • 1 lb firm potatoes yukon gold or fingerling
  • 1 onion finely chopped
  • 1 clove garlic finely choppped
  • 1 bay leaf
  • 7 oz bacon cubes
  • 6 1/2 tbsp dry white wine
  • 8 oz cubed strong soft cheese

Direcciones

  1. Preheat oven to 375 and prepare 6 cup muffin tin with buter. Peel the potatoes and using a mandoline julienne blade make matchsticks. Put the onion garlic, bay leaf and bacon into a larbge nonstick frying pan and cook until the bacon is golden. Add the wine and reduce until only 1 couple tbsp of liquid remian. Stir in the potato matchsticks, and take off the heat. Remove the bay leaf and stir in the cubes of cheese.
  2. divide the mixture between the 6 cups of muffin tins and bake for 15-20 min or until golden and bubbly
  3. A silcone muffin would work well
