Ingredientes

  • 8 c. de-fatted chicken broth, canned or possibly homemade*
  • 1/2 c. diced carrots
  • 1/2 c. diced celery
  • 1/2 c. diced onions
  • 1 x clove garlic, crushed then chopped fine
  • 1 x (16 ounce) bag frzn cheese tortellini
  • 2 c. escarole, washed, torn and then packed ** salt and pepper, to taste Mrs. Dash Extra Spicy, to taste fresh grated parmesan cheese, as garnish croutons, as garnish

Direcciones

  1. Place first 5 ingredients in a 5-quart. Dutch oven.
  2. Bring to boil, then lower heat to a simmer.
  3. Simmer, partially covered, for 15 min.
  4. Add in cheese tortellini and cook in broth, according to directions on package.
  5. Add in salt, pepper and Mrs. Dash, to taste.
  6. Remove soup from heat and add in escarole.
  7. Cover soup and let remain off heat for about 10 min, allowing escarole to wilt.
  8. Bring back to serving temperature then ladle soup into large bowls and garnish with fresh grated parmesan cheese and croutons, if you like.
  9. De-fatted chicken broth: chill canned or possibly homemade broth overnight.
  10. Remove any solid fat which has formed on the top and throw away .
  11. I have used frzn, minced spinach , in place of the escarole, in a healthy pinch.
  12. I prefer the escarole as it doesn't seem to have as strong of a flavor as the spinach. When I have used the spinach, I only used one half of a 10 ounce. box. I have never tried fresh spinach-it may not have as strong a flavor as the frzn and may work quite nicely.
