Every now and then, I get into a rut and just don’t feel like cooking. Well, maybe more than I would like to admit. I grudgingly made my way to the fridge and this is when I stare endlessly at all the food items and hope that a recipe idea will pop into my mind. At the same time, I am looking for something simple to throw together.

I have made crustless quiche before and the family loved it. Now I am started to figure out what I should cook. I decided to put together this cheeseburger pie and keep it low carb at the same time. How cool is that?

I was pleasantly surprised to discover that everyone loved this quick and easy dish. It’s the perfect weeknight meal.

1 lb ground beef, 85/15 ½ cup tomato puree or tomato sauce 2 Tablespoons Almond Meal 1 teaspoon dried Basil 1 teaspoon dried oregano ½ tsp sea salt 1 teaspoon onion powder 3 cloves garlic, peeled and minced 1 egg, beaten Cheese Topping 2 eggs, beaten 3 Tablespoons Heave Cream ½ teaspoon ground mustard spice ¼ teaspoon garlic salt ¼ teaspoon ground black pepper ½ cup shredded cheddar cheese, omit

In a skillet brown the beef and set aside. In a bowl combine the egg, garlic, onion powder, sea salt, basil, oregano, almond meal, and tomato sauce. Add the browned beef and combine.

Preheat oven to 400 degrees F Pour into a prepared pan In a separate bowl, add the 2 beaten eggs, the ground mustard, garlic salt, pepper and cheddar cheese Pour evenly on the top of the browned beef Bake for 25 to 30 minutes 3.3.3077
