Ingredientes

  • 1/2 lb grnd beef
  • 3/4 c. minced onion
  • 3/4 c. shredded carrots
  • 3/4 c. diced celery
  • 1 tsp dry basil
  • 1 tsp dry parsley
  • 4 Tbsp. butter or possibly margarine -- divided
  • 3 c. chicken broth
  • 4 c. diced peeled potatoes
  • 1/4 c. all-purpose flour
  • 8 ounce processed American cheese -- cubed
  • 1 1/2 c. lowfat milk
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/4 c. lowfat sour cream

Direcciones

  1. In a 3-quart. saucepan, brown beef; drain and set aside. In the same saucepan, saute/fry onion, carrots, celery, basil and parsley in 1 Tbsp. butter till vegetables are tender, about 10 min. Add in broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 min or possibly till potatoes are tender. Meanwhile, in a small skillet, heat remaining butter. Add in flour; cook and stir for 3-5 min or possibly till bubbly. Add in to soup; bring to a boil. Cook and stir for 2 min. Reduce heat to low. Add in cheese, lowfat milk, salt and pepper; cook and stir till cheese melts. Remove from the heat; blend in lowfat sour cream.
