Cheesecake Mousse With Rum Poached Plums

Ingredientes

  • 1 c. Water
  • 1/3 c. Granulated sugar
  • 2 Tbsp. Dark rum
  • 2 x Plums
  • 1/2 c. Whipped cream cheese (about 3 ounces)
  • 3 Tbsp. Confectioners' sugar
  • 1/2 tsp Vanilla
  • 1/2 c. Well-chilled heavy cream

Direcciones

  1. Have ready a bowl of ice and cool water. In a small saucepan simmer 1 c. water, granulated sugar, and rum, stirring occasionally, 10 min. Pit plums and cut each plum into 12 wedges. Simmer plums in syrup till tender, 2 to 3 min. Transfer plum mix to a bowl and set it in bowl of ice water. Let plum mix stand, stirring occasionally, till chilled.
  2. In a bowl whisk together cream cheese, confectioners' sugar, vanilla, and a healthy pinch salt till smooth. In another bowl beat heavy cream till it holds soft peaks and whisk into cream-cheese mix. Divide mix between 2 goblets and chill, covered, 15 min.
  3. Serve mousse topped with plums and some syrup.
  4. Yield: 2 servings
