Cheesy Cauliflower Bratwurst Soup

Summer is coming to an end. I can smell it in the air. Fresh, clean, and crisp. On my walks, I have noticed a few leaves have started to fall. The days are getting shorter and the nights are cooler. Autumn is right around the corner, which means: Farmers Markets, Caramel Apples, Football and Soup! Oh, how I love this time of year. So let's say Good-bye to Summer and say Hello to Fall, my favorite time of year!

1. Heat oil in skillet over medium heat, add onion and garlic. Saute for 5 mins.

2. Add sliced bratwurst, season with salt and pepper. Cook until browned on both sides.

3. Remove from heat. Stir in 1 T. liquid smoke, if using. Set aside.

4. In large dutch oven or soup kettle add water, cheddar cheese soup, diced tomatoes, chicken broth, basil, parsley, thyme, creole

seasoning and hot sauce.

5. With slotted spoon, transfer brat mixture, into soup kettle.

6. Bring to a boil. Reduce heat and simmer for 30 mins.

7. Add cubed Velvetta cheese, stir until melted.

8. Add 4T cornstarch to milk, stir until smooth. Add 1/4 c hot soup liquid into milk mixture stir until smooth. Add back to soup kettle.

Stir.

9. Add steamed cauliflower and shredded cheddar cheese.

10. Stir lightly and cook until slightly thickened.

Note: bratwurst is easier to slice if it is partly frozen.

Note: 16 oz. frozen, steamed, cauliflower and be substituted for fresh cauliflower
