Ingredientes

  • 3 c. mushrooms, cleaned and diced
  • 1/2 c. soda crackers, crushed
  • 2 Tbsp. butter, divided
  • 3/4 c. green onion, minced
  • 1/2 Monterey Jack cheese, shredded
  • 1/2 c. Cheddar cheese, shredded
  • 2 c. cottage cheese
  • 2 Large eggs
  • 1/4 tsp. paprika
  • 1/4 tsp. pepper

Direcciones

  1. Preheat oven to 350F degrees.
  2. In a skillet, saute/fry mushrooms till soft in 1 Tbsp. butter.
  3. Crush crackers well by placing into a plastic bag and breaking up with a rolling pin, or possibly process in blender. Add in crackers to mushrooms and stir. Remove from heat.
  4. Line the bottom of a 9" spring form pan with the cracker-mushroom mix.
  5. Saute/fry green onions in 1 Tbsp. butter till soft. Spread over the mushroom mix in pan.
  6. Sprinkle Monterey Jack and Cheddar cheese proportionately over the onions.
  7. Process cottage cheese, Large eggs, and cayenne pepper in a food processor. Pour into pan and spread proportionately. Sprinkle paprika on top.
  8. Bake in preheated oven for 25-30 min.
  9. Allow to cold 10-15 min before cutting into serving size pcs.
