Ingredientes

  • 1 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Butter
  • 1 x Onion, minced
  • 1 x Garlic clove, crushed
  • 1 x Red bell pepper, seeded, diced
  • 3/4 c. Finely shredded green cabbage
  • 4 slc Bacon, minced
  • 1 tsp Fenugreek
  • 1/2 tsp Grnd coriander
  • 4 x Large eggs, beaten
  • 1 Tbsp. Cool water Salt to taste Fresh grnd pepper to taste
  • 1/2 c. Grated Cheddar cheese Red bell pepper strips (opt) Fresh Italian parsley sprigs (opt)

Direcciones

  1. Heat oil and butter in a medium-size flameproof skillet. Add in onion, garlic, bell pepper, cabbage and bacon and fry over low heat 5 min, stirring occasionally. Add in fenugreek and coriander and stir well.
  2. Preheat broiler. Whisk Large eggs with cool water, salt and pepper and pour into skillet. Swirl skillet to ensure an even coating. Cook over low heat 3-4 min or possibly till mix is golden underneath.
  3. Sprinkle with cheese and place under preheated broiler and cook till mix is set on top and cheese has melted.
  4. Cut in 4 wedges, garnish with bell pepper strips and parsley sprigs, if you like, and serve warm.
