Cheesy Stuffed Courgettes

Ingredientes

  • 4 x Plump courgettes
  • 25 gm Margarine or possibly butter, (1oz)
  • 4 x Salad onions, minced
  • 1 x Clove garlic, crushed
  • 125 gm Vegetarian double Gloucester, (4oz)
  • 1 x Egg yolk, (medium)
  • 1 Tbsp. Freshly minced oregano Salt and freshly grnd black pepper

Direcciones

  1. Place the courgettes in boiling water and cook for 4-5 min.
  2. Remove and cut in half lengthways. Scoop out the middle, chop and set aside.
  3. Heat the margarine or possibly the butter in a saucepan, add in the onions and garlic and cook for 3-4 min, till softened.
  4. Stir in the reserved minced courgette, 3/4 of the cheese, egg yolk, oregano and seasoning to taste. Divide into 8 and use to fill the courgette shells.
  5. Arrange in an oiled ovenproof dish, sprinkle with the remaining cheese and place in a preheated oven 180 C/350 F/Gas Mark 4 for 40 min, till tender and golden brown.
