Ingredientes

  • 1 tbs. olive oil
  • 1 tbs. butter
  • 2 lbs. yellow squash, or about 6 medium
  • 2-3 scallions, chopped
  • 1 beaten egg
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 cup crumbled saltines or buttery Ritz crackers, tossed in melted butter, OR dry cornbread dressing
  • 1 cup shredded cheese, divided
  • 1/4 tsp. oregano
  • salt and pepper to taste
  • paprika

Direcciones

  1. Heat oven to 350 F.
  2. Slice or coarsely chop squash.
  3. Saute squash and onions in oil/butter.
  4. In a 2 qt baking dish, stir beaten egg with sour cream, milk, crackers, half the cheese, and seasonings.
  5. Stir in cooked squash.
  6. Bake 30 minutes, uncovered.
  7. Top with rest of cheese and paprika.
  8. Serve when cheese has melted.
