Chef Kerry Sear's Vegetable Burgers

Ingredientes

  • 1 Tbsp. Extra virgin olive oil
  • 1 c. Onion, chopped
  • 1 c. Carrots, grated
  • 1 c. Turnips, grated
  • 1 c. Zucchini, grated
  • 1 c. Beets, grated
  • 1/2 Tbsp. Garlic, minced
  • 1/2 tsp Cumin, grnd
  • 3/4 Tbsp. Dry dill and tarragon, mixed
  • 1/4 c. Oats, rolled, instant
  • 1/4 c. Water
  • 1 1/2 c. Potatoes, mashed
  • 1/4 c. Hazelnuts, minced
  • 1/3 c. Rice, cooked Salt and pepper to taste Extra virgin olive oil for sauteeing (optional)

Direcciones

  1. Heat oil in a large skillet. Add in onion, carrots, turnips, zucchini, beets, garlic, cumin and herbs.
  2. Saute/fry till vegetables begin to wilt, about 3 to 5 min. Allow to cold slightly.
  3. Soak oats in water for 5 min, then drain and press out excess water.
  4. Add in to vegetable mix along with potatoes, hazelnuts and rice. Season with salt and pepper. Form mix into 8 patties.
  5. Grill patties on a well-oiled vegetable grill, or possibly saute/fry in extra virgin olive oil for 3 to 4 min on each side, till golden brown.
