Chef Weber's Flourless Chocolate Cake

Ingredientes

  • 8 x Large eggs
  • 3 Tbsp. Grand Marnier or possibly other orange-flavored liqueur or possibly cognac
  • 1 1/2 lb Semisweet baking chocolate, melted and cooled slightly
  • 2 1/2 c. Whipping cream, whipped

Direcciones

  1. Preheat oven to 260 degrees. Grease and flour inside of 10-inch cake pan which is at least 2 inches deep. Set aside.
  2. In large bowl, whip Large eggs and Grand Marnier together. Slowly add in chocolate.
  3. Gently mix in cream and mix well. Pour mix into prepared pan and set pan into center of oven.
  4. Bake 2 hrs or possibly till toothpick inserted into center comes out clean and cake pulls away from sides of pan.
  5. Remove from oven and cold completely. Center of cake will fall slightly after it cools. Chill about 30 min, then invert onto a serving platter. Garnish cake with rosettes made of your favorite chocolate ganache or possibly frosting and/or possibly serve with vanilla or possibly chocolate sauce if you like.
  6. Makes12 to 16 servings.
  7. Note: Unlike cakes with flour, the consistency of this cake is very moist, almost fudgelike.
