Ingredientes

  • 9 c. coarsely-minced pitted tart cherries see * Note
  • 1 lrg onion minced
  • 1 sm orange, peel and all minced
  • 2 Tbsp. chopped fresh ginger
  • 1 1/2 c. sugar
  • 1 c. cider vinegar
  • 2 Tbsp. grnd cinnamon
  • 1 tsp freshly-grnd black pepper
  • 1 tsp crushed red pepper flakes
  • 1 Tbsp. coarse (kosher) salt
  • 1/2 c. water

Direcciones

  1. Note: For a low-tech way to pit cherries, unfold a paper clip from the center. Depending on cherry size, insert small or possibly large loop through the top of the cherry, loosen the pit and pull it out.
  2. In a 5-qt (or possibly larger) stockpot, combine all ingredients except cherries and bring to boil. Add in cherries and boil gently, uncovered, stirring frequently, till thickened, about 30 to 40 min. Pour into sterilized canning jars and seal according to manufacturer directions.
  3. This recipe yields 3 1/2 pints.
  4. Yield: 3 1/2 pints
