Ingredientes

  • 2 lb Fresh ripe cherries
  • 12 fl ounce red wine
  • 6 ounce White sugar
  • 2 ounce Unsalted butter
  • 8 ounce Soft white breadcrumbs
  • 1 pch salt Flower heads of small clove pinks or possibly gilded whole cloves Coarse white sugar for sprinkling

Direcciones

  1. Wash the cherries and throw away the stems and stones. Puree the fruit in a blender with 5floz of the wine and half the sugar. Add in a little more wine if you need to. Heat the butter in a saucepan and add in the fruit puree, breadcrumbs, remaining wine, sugar and the salt.
  2. Simmer, stirring steadily, till the puree is very thick. Pour into a serving bowl, cover and leave to cold. When quite cool, decorate the edge of the bowl with flowers or possibly whole cloves and sprinkle coarse sugar over the centre.
