Receta cherry tomato gratin
Nicole at The Giving Table chose this week’s Food Matters Project recipe for Savory Tomato Crisp. There’s nothing better than sweet tomatoes in the summer time. I decided to make individual cherry tomato gratins for lunch today. This recipe can easily be doubled and served in a larger gratin dish.
Here’s my take: Cherry Tomato Gratin
Ingredients
- 1 pint of cherry tomatoes
- 4 oz. panko breadcrumbs
- ¼ cup pecorino romano
- 1 tablespoon fresh basil
- 1 garlic clove
- 1 tablespoon extra virgin olive oil
- salt & pepper, to taste
Putting it all together
Pre-heat your oven to 400°F. Combine breadcrumbs, pecorino romano, basil and garlic in a bowl, drizzle with olive oil and toss to combine. Season with salt and pepper.
Place cherry tomatoes in the bottom of the gratin dish, top with breadcrumb mixture. Cover with foil and bake for 10 minutes. Remove foil and bake for an additional 15-20 minutes until the tomatoes are tender and the crust is golden brown.
Serves 2
