A few years ago, one of my co-workers presented each of us with a bag of this Chex® Caramel Snack Mix. Just like I was seduced gifted with a Christmas plate of Peanut Butter Chewies, I couldn't stop eating these! I asked her for the recipe, which she readily agreed to do. Then, we both forgot about it and a few Christmas seasons came and went.
Fast forward to this Christmas, when she mentioned she was making her Chex Mix. My eyes lit up, and asked if she'd still share it with me. Sure enough, she handed the recipe to me and I made this (after Christmas). My husband loves snacks that are crunchy, and I had a feeling he'd love this one as well. .%20%20My%20husband%20loves%20snacks%20that%20are%20crunchy,%20and%20I%20had%20a%20feeling%20he'd%20love%20this%20one%20as%20well.%20I%20was%20really%20excited%20to%20make%20this!%3C/p%3E%3Cp%3ECraig%20and%20I%20enjoy%20having%20a%20Netflix%20night,%20with%20some%20freshly%20made%20kettle%20popcorn.%20%20%20I%20figured%20this%20would%20be%20the%20perfect%20chance%20to%20make%20this%20for%20my%20family.%20%20The%20ingredients%20are%20completely%20interchangeable--%20I%20used%20freshly%20popped%20corn,%20Corn%20Chex,%20Rice%20Chex,%20Cheerios,%20Chinese%20Crispy%20Noodles%20and%20cocktail%20peanuts.%3C/p%3E%3Cp%3EIn%20total,%20there%20are%2019%20cups%20of%20dry%20ingredients!%20%20Yes,%20enough%20to%20feed%20a%20Super%20Bowl%20Party!%3C/p%3E%3Cp%3EUndoubtedly,%20what%20makes%20this%20snack%20mix%20taste%20sooooooooooo%20good%20is%20the%20buttah.%20Two%20sticks%20of%20butter,%20to%20be%20exact.%20%20There's%20brown%20sugar%20and%20a%20little%20corn%20syrup%20added%20to%20the%20mix...%3C/p%3E%3Cp%3E...which%20is%20then%20heated%20to%20a%20boil.%20%20The%20directions%20said%20to%20add%20the%20vanilla%20with%20all%20the%20ingredients,%20but%20I'm%20old%20school--%20and%20I%20try%20to%20add%20extracts%20to%20hot%20ingredients%20at%20the%20very%20end.%20Why?%20I%20don't%20want%20to%20dilute%20the%20potency%20of%20the%20vanilla--%20so%20that's%20what%20I%20did.%20%20Last,%20and%20best%20of%20all,%20this%20buttery%20and%20caramel%20hot%20lava%20is%20poured%20over%20all%20the%20dry%20ingredients%20and%20gently%20mixed.%3C/p%3E%3Cp%3EYou%20can%20really%20smell%20the%20buttery%20goodness!%20Yum!%3C/p%3E%3Cp%3EOnce%20all%20the%20cereals%20and%20crispy%20goodies%20are%20evenly%20coated,%20I%20poured%20this%20into%20a%20deep%20roasting/baking%20pan%20and%20baked%20this%20at%20250%20for%2045%20minutes,%20stirring%20every%2015%20minutes.%3C/p%3E%3Cp%3EOnce%20baked,%20I%20evenly%20spread%20the%20mixture%20over%20two%20parchment%20covered%20baking%20sheets.%20It's%20pretty%20hot,%20so%20I%20resisted%20the%20temptation%20to%20eat%20until%20cool.%3C/p%3E%3Cp%3EOnce%20cool,%20I%20placed%20the%20snack%20mix%20into%20a%20large%20air%20tight%20container,%20breaking%20apart%20as%20I%20did%20so.%20This%20makes%20a%20lot!%3C/p%3E%3Cp%3EWith%20a%20wicked%20little%20smile,%20I%20offered%20a%20bowl%20of%20the%20snack%20mix%20to%20my%20son%20and%20then%20to%20my%20son.%20Oh,%20I'm%20a%20sly%20little%20fox.%20%20Their%20eyes%20lit%20up.%20%20Bam!%20%20Home%20run%20Touch%20Down!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20I%20found%20a%20version%20of%20this%20recipe%20on%20both%20Chex.com%20and%20Betty%20Crocker.com.%20I%20think%20that%20anyone%20could%20play%20around%20with%20what%20ingredients%20you%20want,%20and%20it%20would%20be%20good.%20Instead%20of%20peanuts,%20pecans%20or%20cashews%20would%20be%20great.%20You%20could%20add%20Wheat%20Chex%20to%20the%20mix.%20Personally,%20I'd%20add%20more%20popcorn.%20I%20love%20the%20Chinese%20crispy%20noodles,%20and%20highly%20recommend%20them.%20%20The%20buttery%20caramel%20coating%20is%20what%20will%20get%20you%20hooked.%3C/p%3E%3Cp%3ESuper%20Bowl%20isn't%20that%20far%20away.%20%20Makes%20this.%20People%20will%20ask%20you%20for%20the%20recipe,%20just%20as%20I%20asked%20my%20friend.%3C/p%3E%3Cp%3EYou're%20welcome!%3C/p%3E%3Cp%3Ethe%20end%20of%20each%20recipe%20post.%20If%20you%20cannot%20view%20it,%20you%20might%20be%20using%3C/p%3E%3Cp%3Ean%20older%20version%20of%20InternetExplorer.%20You%20should%20be%20able%20to%20view%20my%3C/p%3E){kind=link}
