Saute garlic, onion and tomatoes in 1 tbsp. oil in a medium heat pan. Cook until tomatoes turn soft.
After washing and draining chicken put it in the pan together with the sauteed garlic onion and tomatoes. Put salt and pepper according to taste. Pour 1 cup water or chicken stock and cover pan and let it simmer for 3 minutes.
Put potatoes and carrots together with tomato sauce. Cover pan until potatoes and carrots are tender.
Put milk and cheese and let it simmer for another 5 mimutes then serve.
