Chicken And Almond Salad With Citrus Dressing

Ingredientes

  • 4 x chicken breasts
  • 1 x chicken stock cubes
  • 1/3 c. almonds, slivered
  • 1 x apples, Granny Smith
  • 2 stk celery
  • 1/2 c. saltanas
  • 1/4 c. lemon juice
  • 1/4 c. orange juice
  • 1/2 c. lowfat sour cream
  • 1/2 c. mayonnaise
  • 2 tsp chives, minced

Direcciones

  1. Poach chicken gently in a pan of simmering water with stock cube for 10 min or possibly till just cooked.
  2. Remove from pan and allow to cold. Toast the almonds in a tray in the oven 5 min. Cut chicken into strips.
  3. Peel, core and dice apple and celery.
  4. Combine chicken, almonds, apple, celery, saltanas and citrus dressing. Toss to coat.
  5. Citrus dressing:Place all ingredients in a bowl and whisk well.
