%20it%20came%20together%20easily.%3C/p%3E%3Cp%3ETo%20start%20I%20mixed%20together%20flour,%20poultry%20seasoning,%20salt%20and%20pepper%20in%20a%20shallow%20dish.%20Then%20I%20pounded%20the%20chicken%20breast%20so%20that%20they%20were%20a%20uniform%201/2%22(approximately)%20thickness%20to%20insure%20quick%20and%20even%20cooking.%20I%20sprinkled%20the%20chicken%20breasts%20with%20a%20bit%20of%20salt%20before%20dredgeding%20in%20the%20flour%20and%20seasoning%20mixture.%3C/p%3E%3Cp%3EWhile%20I%20coated%20the%20chicken,%20I%20heated%20some%20oil%20in%20a%20large%20skillet.%20Then%20I%20transferred%20the%20chicken%20to%20the%20hot%20oil%20and%20cooked%20for%20about%2010%20minutes,%20flipping%20them%20a%20couple%20of%20times%20until%20the%20juices%20ran%20clear%20and%20they%20were%20no%20longer%20pink.%20Transfer%20the%20chicken%20to%20a%20serving%20dish%20and%20keep%20warm.%3C/p%3E%3Cp%3ENext,%20I%20tossed%20a%20tablespoon%20of%20butter%20into%20the%20same%20skillet%20and%20heated%20until%20just%20bubbly.%20Then%20add%20in%20artichokes%20(I%20used%20canned%20marinated%20artichoke%20hearts,%20slightly%20chopped)%20and%20sliced%20mushrooms.%20Saute,%20stirring%20frequently,%20until%20everything%20starts%20to%20brown%20up%20a%20bit.%3C/p%3E%3Cp%3EWhile%20the%20artichokes%20and%20mushrooms%20saute,%20mix%20the%20wine%20and%20chicken%20broth%20together%20with%20a%20tablespoon%20of%20the%20flour%20mixture%20that%20you%20used%20to%20coat%20the%20chicken.%20Whisk%20until%20smooth-%20as%20in%20NO%20LUMPS!%20Note:%20I%20didn't%20have%20any%20white%20wine%20on%20hand,%20so%20I%20just%20doubled%20the%20amount%20of%20chicken%20broth.%3C/p%3E%3Cp%3ESlowly%20stir%20the%20liquid%20into%20the%20skillet%20and%20cook%20and%20stir%20some%20more%20until%20thickened%20and%20bubbly.%20I%20actually%20added%20a%20bit%20more%20of%20the%20flour%20mixture%20than%20called%20for,%20so%20I%20ended%20up%20pouring%20in%20additional%20chicken%20broth%20to%20thin%20the%20sauce.%20This%20worked%20out%20just%20fine,%20because%20the%20end%20result%20was%20more%20of%20that%20delicious%20sauce%20to%20top%20the%20chicken!%3C/p%3E%3Cp%3ETo%20serve,%20just%20pour%20the%20artichoke/mushroom%20sauce%20over%20the%20cooked%20chicken%20and%20sprinkle%20with%20parmesan%20and%20fresh%20chopped%20parsley.%20Mmmmmm!%3C/p%3E%3Cp%3ENow%20some%20of%20you%20are%20probably%20thinking,%20%22Gee%20Krista,%20that%20looks%20great...but%20my%20kids%20would%20never%20eat%20that.%22%20%20Well,%20my%20kids%20wouldn't%20eat%20it%20either.%20At%20least,%20not%20with%20the%20sauce.%20Both%20seem%20to%20have%20an%20aversion%20to%20mushrooms%20and%20artichokes.%20But%20they%20LOVED%20the%20plain%20breaded%20chicken%20breast.%20I%20set%20aside%20a%20portion%20for%20them%20before%20I%20added%20the%20sauce%20and%20served%20it%20up%20with%20a%20side%20of%20broccoli.%20It%20was%20a%20grown%20up%20dinner%20and%20a%20kid%20dinner%20all%20in%20one!%3C/p%3E%3Cp%3EHere's%20the%20recipe,%20slightly%20altered%20from%20my%20Better%20Homes%20and%20Gardens%20Cookbook.%3C/p%3E%3Cp%3E1.%20In%20a%20shallow%20dish,%20stir%20together%20flour,%20poultry%20seasoning,salt,and%20pepper;%20reserve%20one%20tablespoon%20of%20flour%20mixture.%20Coat%20chicken%20in%20remaining%20flour%20mixture.%3C/p%3E%3Cp%3E2.%20In%20a%20large%20skillet%20cook%20chicken%20in%20hot%20oil%20over%20medium-high%20heat%20for%208%20to%2010%20minutes%20or%20until%20no%20longer%20pink%20(170%20degrees%20F),%20turning%20once.%20Remove%20chicken%20from%20skillet;%20cover%20and%20keep%20warm.%3C/p%3E%3Cp%3E3.%20In%20the%20same%20skillet,%20cook%20mushrooms%20and%20artichoke%20hearts%20in%20hot%20butter%20over%20medium%20heat%20until%20artichokes%20are%20tender%20and%20slightly%20browned.%3C/p%3E%3Cp%3E4.%20In%20a%20small%20bowl%20stir%20together%20reserved%20flour%20mixture,%20wine,%20broth,%20and%20salt%20until%20smooth.%20Add%20wine%20mixture%20to%20skillet.%20Cook%20and%20stir%20until%20thickened%20and%20bubbly.%20Cook%20and%20stir%20for%201%20minute%20more.%20Pour%20sauce%20over%20chicken.%20Sprinkle%20with%20parsley%20and%20cheese.%3C/p%3E%3Cp%3ENotes:%20I%20pounded%20my%20chicken%20breasts%20to%20flatten%20them%20into%20a%20more%20uniform,%20quicker-cooking%20thickness.%20Also,%20I%20doubled%20the%20amount%20of%20chicken%20broth%20to%202/3%20cups%20and%20omitted%20the%20wine%20completely.%20Finally,%20I%20added%20a%20little%20more%20of%20the%20flour%20mixture%20than%20called%20for,%20which%20meant%20that%20I%20needed%20to%20thin%20the%20sauce%20with%20broth,%20but%20ultimately%20yielded%20a%20larger%20amount%20of%20the%20sauce.%20I%20loved%20this%20sauce,%20so%20I%20was%20glad%20to%20have%20more!%3C/p%3E){kind=link}
