Chicken and Asparagus Stir-Fry Recipe
Ingredients:
- Chicken – 225 gms, boneless, skinless, cut into bite-sized pieces
- Asparagus – 225 gms, trimmed, sliced into 1 inch pieces
- Lettuce – 1/2 to 3/4 cup, chopped
- Basmati Rice – 1 1/2 cups, cooked, to serve
- Mint Leaves – few, to garnish
- Soy Sauce – 1 tblsp + 1 tblsp
- Corn Flour – 1/2 tsp, mixed with 1 tsp milk or water
- Garlic – 1/2 tsp + 1/2 tsp, finely sliced
- Sunflower Oil – 1 1/2 tblsp
Method:
1. Combine the chicken, 1 tblsp soy sauce, corn starch and 1/2 tsp garlic.
2. Mix well and keep aside for 10 to 15 minutes.
3. Heat half of the oil in a large pan.
4. Add the garlic and stir-fry for 20 seconds.
5. Add 1 tsp water and asparagus.
6. Sprinkle salt and pepper powder.
7. Cook for a minute or two or until crisp and tender.
8. Transfer to a bowl.
9. Add the remaining oil to the pan.
10. Cook the chicken pieces for 2 minutes.
11. Add the lettuce, salt and pepper powder.
12. Stir well and cook for 30 seconds.
13. Add the reserved asparagus and soy sauce.
14. Mix well.
15. Remove and transfer to a serving plate.
16. Garnish with mint leaves.
17. Serve hot with rice.
