Ingredientes

  • 1 lb chicken, breast, diced
  • 3 Tbsp. butter
  • 1 c. red onion, minced
  • 1/2 c. celery, minced
  • 1/2 c. red pepper, diced
  • 2 x garlic, cloves, chopped
  • 1 tsp cayenne pepper
  • 1/4 tsp saffron
  • 8 ounce chorizo sausage, about 2 sausages, diced into 1/2 inch pcs
  • 1 c. long-grain rice
  • 1 x 14 ounce can diced tomato
  • 3 c. chicken stock
  • 8 x mussel
  • 1/2 c. green onion

Direcciones

  1. Preparation time is 20 min.
  2. In a wok or possibly cast iron pan, brown chicken. Add in butter, red onion, celery, and red pepper to pan.
  3. Add in garlic, cayenne, and saffron.
  4. Add in cooked rice, tomatoes, green onions and stock.
  5. Add in mussels and chorizo.
  6. Allow jambalaya to reduce and serve.
